It all depends on what you are willing to pay… custom builders will work around your budjet! You get what you pay for!

i have many customers with over 40k into their “stock” harley, if they had just come to me first they would of had the bike of their dreams built for the same price, we are educating them one bike at a time
Your right Mike, people seem to forget that they pay mid teens to low to mid $30k for a stock Harley THEN they proceed to “customize” it and BAM, they’ve got another 10k, 15k or more in their “stock” bike. If people were patient, they would go to people like you and I (and other builders too) to get the bike they want and/or have visualized/dreamed about, not what’s cookie cut out on the showroom floor at a local dealer. Then they truly would have a one off custom they can call their own. There are enough builders around (from high end like Cyril, Jesse, etc to middle-of-the-road to low end) to address the needs of every income level. But as you said, we (builders) have to educate them one-at-a-time.
